Bright, herby, and satisfying in a way that feels almost effortless, this grain salad is built around whole-grain freekeh — a smoky, nutty ancient grain that holds its texture beautifully once cooked and cooled. Crisp English cucumber, juicy cherry tomatoes, fresh parsley, and mint bring serious freshness to every bite, while a cumin-spiked lemon dressing ties it all together with a citrusy punch. Every single ingredient here is naturally free of cured or processed components, so there's no label-scanning required — just clean, whole foods from start to finish. The method is straightforward: simmer the freekeh, let it cool, toss everything together, and dress it right before serving. Optional pomegranate seeds scattered over the top add a jewel-like pop of color and a little burst of sweetness that makes the whole bowl feel a bit special. It works beautifully served at room temperature, which makes it ideal for meal prep, potlucks, or a relaxed weeknight dinner side. This is the kind of salad that genuinely gets better as it sits and the dressing soaks into the grain.

Combine the rinsed freekeh, water, and 1/4 tsp salt in a medium saucepan and bring to a boil over high heat. Reduce the heat to low, cover, and cook until the freekeh is tender and has absorbed all the liquid, about 20–22 minutes.
Remove the pan from the heat and let the freekeh steam, covered, for 5 minutes. Spread it onto a large mixing bowl or sheet pan and let it cool for at least 10 minutes, until no longer steaming.
