This grain salad is bright, herby, and genuinely refreshing — the kind of dish that looks impressive on a table but comes together with minimal fuss. Freekeh, a smoky roasted green wheat, gives the salad a satisfying chew and a nutty depth that sets it apart from your average cucumber situation. Every single ingredient here is naturally free from animal-derived gelatin, so there's no need to scrutinize labels or swap anything out — it's just clean, whole food from start to finish. The dressing is a punchy lemon-cumin vinaigrette that ties the crisp cucumber, juicy cherry tomatoes, and fresh herbs together beautifully. A handful of pomegranate seeds scattered over the top adds little bursts of sweetness and a pop of color that makes the whole bowl look like something from a restaurant menu. Serve it at room temperature or slightly chilled, and it holds up well, making it a smart choice for meal prep, potlucks, or a light lunch you'll actually look forward to eating.

Combine the rinsed freekeh, water, and 1/4 tsp salt in a medium saucepan and bring to a boil over high heat. Reduce the heat to low, cover, and cook until the freekeh is tender and has absorbed all the liquid, about 20–22 minutes.
Remove the pan from the heat and let the freekeh steam, covered, for 5 minutes. Spread it onto a large mixing bowl or sheet pan and let it cool for at least 10 minutes, until no longer steaming.
