Sambar is one of those deeply comforting South Indian staples that happens to be completely plant-based by nature, and this version leans into that beautifully. Toor dal simmers down into a thick, porridge-like base before tangy tamarind water, tender eggplant, and bold sambar powder are stirred in — building layers of flavor that feel anything but simple. The real magic comes at the end, when a full can of coconut milk is folded in, giving the broth a rich, slightly sweet creaminess that rounds out all that heat and tartness. Then comes the tempering: mustard seeds popping in hot coconut oil, cumin, dried red chiles, and fresh curry leaves crisping up in seconds before a sliced shallot turns golden at the edges — the whole fragrant skillet gets poured right over the top. It's a technique that transforms the dish in under five minutes and makes the kitchen smell absolutely incredible. Finished with a handful of fresh cilantro, this makes four generous bowls that are satisfying enough to stand on their own alongside rice or flatbread. Every ingredient here is straightforwardly plant-based, so there's no substituting or second-guessing — just a genuinely delicious pot of dal that happens to check every box.

Combine the rinsed toor dal, 3 cups water, and turmeric in a large saucepan or Dutch oven. Bring to a boil over high heat, then reduce to a steady simmer, partially cover, and cook for 25–30 minutes, stirring occasionally, until the dal is completely soft and breaks apart easily when pressed against the side of the pot.
While the dal cooks, whisk the tamarind paste into 1 cup water until dissolved. Set aside.
