Warm, chewy, and rolled in a generous coating of cinnamon sugar, these soft pretzels are the kind of treat that disappears fast — especially fresh out of the oven. The dough comes together with just yeast, flour, water, salt, and a touch of melted vegan butter, so every ingredient is straightforward and easy to source. What gives these pretzels their signature chew and deep golden color is the baking soda bath — a quick 30-second dip per side before baking that transforms simple dough into something that genuinely tastes like a bakery pretzel. Once they come out of the oven, a brush of melted vegan butter helps the cinnamon sugar coating cling to every curve and twist, creating that sweet, crackly finish you'd expect from a fair-food classic. The whole recipe makes 8 pretzels, so there's plenty to share — or not. They're best served warm when the coating is still slightly soft, but they firm up beautifully as they cool if you can manage to wait that long.

In a large bowl or the bowl of a stand mixer, combine the warm water, 1 tsp organic cane sugar, and yeast. Stir briefly and let stand for 5–7 minutes, until foamy and fragrant.
Add the flour, salt, and 1 tbsp melted vegan butter to the yeast mixture. Mix with a dough hook on medium speed (or stir with a wooden spoon, then turn out and knead by hand) for 5–7 minutes, until the dough is smooth, slightly tacky, and pulls cleanly away from the sides of the bowl.
