⅓ cup roasted almonds or walnuts
¼ cup fig jam or apricot jam
¼ cup cornichons or bread-and-butter pickles
2 tbsp whole-grain mustard
1 tbsp fresh rosemary sprigs (optional)

Place the drained cashews, lemon juice, nutritional yeast, garlic, salt, and 2 tbsp water in a high-speed blender or food processor. Blend on high, scraping down the sides as needed, until completely smooth and creamy, about 2–3 minutes. Add the remaining 1 tbsp water only if needed to get the blender moving — the finished texture should be thick and spreadable, similar to soft goat cheese.

Transfer the cashew cheese to a small bowl and fold in the chives. Taste and adjust salt or lemon juice as needed. Press the everything bagel seasoning onto the top surface of the cheese. Refrigerate for at least 30 minutes until slightly firmed and chilled.
