Bright, citrusy, and genuinely refreshing, this lemonade gets an unexpected lift from a lime zest–infused agave syrup that takes just a few minutes on the stovetop. Steeping the zest in warm agave and water pulls out all those fragrant, floral oils before the syrup ever hits the pitcher — it's a small step that makes a noticeable difference. Fresh-squeezed lemon juice keeps things tart and vibrant, while the agave sweetens everything without any honey or refined sugar. The whole drink is completely plant-based, and since every ingredient here is naturally free of tree nuts, there's zero label-reading stress involved. You can dial the tartness up or down to taste, which makes it easy to please a whole crowd. Serve it over a big pile of ice with a few citrus slices floating on top and it looks like something you'd pay too much for at a café — except you made it at home in under 30 minutes.

Combine the agave syrup, 1/2 cup water, and lime zest in a small saucepan over medium heat, stirring until the agave is fully dissolved, about 2–3 minutes. Remove from heat and let the syrup steep for 15 minutes so the lime zest infuses fully.
Pour the syrup through a fine-mesh strainer into a pitcher, pressing the zest lightly to extract all the liquid. Discard the solids.
