Fresh-squeezed lemon juice, agave syrup, and a hit of lime zest come together in a drink that's bright, tangy, and genuinely refreshing — the kind of thing that makes you want to sit outside and do absolutely nothing productive. The lime zest is steeped right into a warm agave simple syrup, which pulls out all that fragrant citrus oil before the syrup is strained clean and poured into the pitcher. It's a small step that makes a noticeable difference, giving the finished drink a layered citrus flavor that goes well beyond basic lemonade. Every ingredient here is whole and unprocessed, so there's no reason to squint at a label or wonder what's hiding in a store-bought mix. Agave dissolves beautifully without any of the graininess you sometimes get with granulated sugar, and it keeps the whole drink plant-based from start to finish. Serve it over a big glass of ice with a few citrus slices and it looks as good as it tastes — effortlessly pretty without any extra effort.

Combine the agave syrup, 1/2 cup water, and lime zest in a small saucepan over medium heat, stirring until the agave is fully dissolved, about 2–3 minutes. Remove from heat and let the syrup steep for 15 minutes so the lime zest infuses fully.
Pour the syrup through a fine-mesh strainer into a pitcher, pressing the zest lightly to extract all the liquid. Discard the solids.
