Tart, citrusy, and impossibly refreshing, this lemonade gets a serious flavor upgrade from a lime zest–infused agave simple syrup that steeps right on the stovetop. The result is a drink that tastes layered and bright — not just sweet and sour — with a floral citrus note that plain sugar syrup simply can't deliver. Agave dissolves beautifully into the syrup base, keeping everything completely plant-based without any compromise on sweetness or texture. Every ingredient here is straightforward and naturally free from tree nut concerns, so you can pour a glass and pass it around without a second thought. Fresh-squeezed lemon juice is non-negotiable for that vivid, just-picked flavor, and the recipe even lets you dial the tartness up or down to suit your crowd. Serve it over a big pile of ice with a few citrus slices floating on top and it looks as good as it tastes.

Combine the agave syrup, 1/2 cup water, and lime zest in a small saucepan over medium heat, stirring until the agave is fully dissolved, about 2–3 minutes. Remove from heat and let the syrup steep for 15 minutes so the lime zest infuses fully.
Pour the syrup through a fine-mesh strainer into a pitcher, pressing the zest lightly to extract all the liquid. Discard the solids.
