Fresh-squeezed lemon juice, agave syrup, and a hit of lime zest come together in a drink that's bright, tangy, and genuinely refreshing — the kind of thing that makes you want to sit outside and do absolutely nothing productive. What makes this recipe especially smart is that every single ingredient is whole and unprocessed, so there's no need to scan labels for synthetic preservatives like BHA or BHT that sneak into bottled juices and flavored syrups. The lime zest gets steeped directly into a warm agave simple syrup, which pulls out all that fragrant citrus oil before the solids are strained away — a small step that adds serious depth to the final glass. Agave dissolves beautifully without any of the additives sometimes found in conventional simple syrups or shelf-stable sweeteners, keeping everything clean from start to finish. You can dial the tartness up or down just by adjusting the water or adding an extra squeeze of lemon, so it's easy to make it exactly how you like it. Poured over ice with a slice of citrus on the rim, it looks as good as it tastes.

Combine the agave syrup, 1/2 cup water, and lime zest in a small saucepan over medium heat, stirring until the agave is fully dissolved, about 2–3 minutes. Remove from heat and let the syrup steep for 15 minutes so the lime zest infuses fully.
Pour the syrup through a fine-mesh strainer into a pitcher, pressing the zest lightly to extract all the liquid. Discard the solids.
