There is something deeply satisfying about a glass of lemonade that tastes exactly like what it is — real citrus, nothing else. This version gets its sweetness from agave syrup instead of refined sugar, and the flavor depth comes from a lime zest–infused simple syrup that steeps right on the stovetop. That small extra step makes a genuinely big difference, layering a floral, slightly tropical brightness into every sip without a drop of anything synthetic. Every ingredient here is exactly what it sounds like, which means you can feel completely confident about what you're pouring into your glass. Fresh-squeezed lemon juice does all the heavy lifting, and the recipe even encourages you to taste and adjust the balance to your own preference — more tart, lighter, totally up to you. It's the kind of drink that makes store-bought lemonade feel like a compromise you'll never need to make again.

Combine the agave syrup, 1/2 cup water, and lime zest in a small saucepan over medium heat, stirring until the agave is fully dissolved, about 2–3 minutes. Remove from heat and let the syrup steep for 15 minutes so the lime zest infuses fully.
Pour the syrup through a fine-mesh strainer into a pitcher, pressing the zest lightly to extract all the liquid. Discard the solids.
