Pat the okra pieces completely dry with a clean kitchen towel or paper towels ā any surface moisture will cause them to steam and become slimy rather than sear.
Heat 2 tablespoons of the oil in a large skillet or wok over medium-high heat until shimmering. Add the okra in a single layer and cook, stirring only every 2ā3 minutes, until the pieces are lightly browned at the edges and no longer sticky, about 10ā12 minutes.
