Dried smoked paprika can sometimes contain mold toxins, but the small amount in this recipe—about a pinch per serving—is likely tolerated by many. Preheat the oven to 450°F (230°C). Line a baking sheet with foil. Halve the eggplants lengthwise, brush the cut sides with 1 tbsp of the olive oil, and place them cut-side down on the prepared baking sheet.
Roast the eggplants for 35–40 minutes, until the skins are deeply wrinkled, the flesh is completely collapsed, and a fork slides through the thickest part with no resistance.
