Chef's tip
Use thin chicken scaloppini, or pound chicken breast to about 1/4 inch thick. Cook to 165°F (74°C).
½ tsp kosher salt
¼ tsp black pepper

For the breading

½ cup all-purpose flour
2 large eggs
1 cup plain breadcrumbs
¼ cup grated parmesan cheese
Chef's tip
Choose a grated-style vegan parmesan and use the same amount.
1 tsp dried oregano
½ tsp garlic powder

For frying

¼ cup olive oil

For topping

1 ½ cups marinara sauce
1 ½ cups shredded mozzarella cheese
Chef's tip
If the dish is baked or melted, cover it or keep the heat gentle - dairy-free shreds melt more slowly than dairy cheese.
¼ cup grated parmesan cheese
Chef's tip
Choose a grated-style vegan parmesan and use the same amount.

For serving

2 tbsp fresh basil leaves, torn (optional)

Instructions

1
Position an oven rack 6 inches from the broiler element and preheat the broiler to high. Place a wire rack over a baking sheet and set aside.
2
Pat the veal cutlets dry with paper towels and season both sides with the salt and pepper.
