Preheat the oven to 350°F (175°C). Lightly grease 6 cups of a standard 12-cup muffin tin with a small amount of coconut oil.
In a small saucepan over low heat, combine the 3 tbsp coconut oil and 3 tbsp maple syrup, stirring until the coconut oil is fully melted and the mixture is smooth, about 1–2 minutes. Remove from heat and stir in the 1 tsp vanilla bean paste.
