Few frozen desserts feel as clean and pure as a well-made sorbet, and this vanilla bean version delivers that silky, refreshing quality without a single additive or stabilizer in sight. Store-bought sorbets and ice creams are notorious for sneaking in lecithins, mono- and diglycerides, and other emulsifying agents โ but here, the ingredient list is refreshingly short and completely transparent. The base is nothing more than water, sugar, a real vanilla bean, a squeeze of lemon, and a pinch of salt, churned into something genuinely elegant. Steeping the vanilla pod in the warm syrup before chilling coaxes out every bit of floral, aromatic depth, so the flavor is anything but plain. The warm strawberry-blueberry compote spooned over the top adds a jammy, jewel-toned contrast that makes this feel like a proper restaurant dessert. Maple syrup and fresh lemon juice keep the compote just as clean as the sorbet itself โ no thickeners, no additives, just fruit doing what fruit does best. It's the kind of dessert that proves simple ingredients, handled with a little care, are all you ever really needed.

Combine the water, sugar, vanilla bean seeds, and the scraped pod in a medium saucepan over medium heat, stirring until the sugar dissolves completely, about 3โ4 minutes. Do not let the mixture boil.
Remove from the heat, add the pinch of salt and 1 tbsp lemon juice, and let the syrup steep for 15 minutes. Remove and discard the vanilla pod, then strain the syrup through a fine-mesh strainer into a bowl.
