Line a baking sheet with parchment paper. Peel and finely grate the apple on the small holes of a box grater, then squeeze the grated apple firmly in your hand or in a clean kitchen towel to remove as much liquid as possible — the mixture will be too wet to hold its shape if the apple is not well-drained.
Add the rolled oats, drained grated apple, sunflower seed butter, maple syrup, vanilla extract, cinnamon, sea salt, and hemp seeds (if using) to a large mixing bowl. Stir with a sturdy spoon until everything is evenly combined and the mixture holds together when pressed between your fingers.
