These layered parfaits are the kind of dessert that looks impressive but comes together with simple, wholesome ingredients you likely already have on hand. Warm maple-glazed apples, billowy vanilla whipped cream, and a toasty oat-and-almond crumble stack up into something that feels genuinely special — and each serving is as pretty as it is satisfying. For anyone navigating a low-histamine approach, finding a dessert that doesn't rely on fermented, aged, or heavily processed ingredients can feel like a real challenge, but this one sidesteps all of that naturally. Fresh apples, cold heavy cream, pure vanilla extract, and rolled oats are all clean, straightforward choices that keep things well within reach. The Ceylon cinnamon and maple syrup add warmth and sweetness without any of the usual ingredient-label anxiety. Everything can be prepped in stages — the crumble and apples both cool while you move on to the next step — so assembly is relaxed and stress-free. Serve these right away for the best contrast between the creamy layers and the crisp, golden crumble on top.

Some low histamine plans avoid cinnamon, but cinnamon doesn't actually contain histamine. This recipe only uses about 1/8 teaspoon per serving. If you prefer to always avoid true ceylon cinnamon, please tap it and change its rating to Red.

Nuts and seeds are typically low in histamine but carry other amines. This recipe only uses about 9 g per serving. If you prefer to always avoid almond, please tap it and change its rating to Red.

Make the oat crumble: In a medium skillet over medium heat, combine the rolled oats, sliced almonds, melted butter, 1 tbsp maple syrup, and 1/8 tsp salt. Cook, stirring frequently, for 5–7 minutes until the oats are golden and fragrant and the almonds are lightly toasted. Transfer to a plate and spread in a single layer to cool completely, about 15–20 minutes — the crumble will crisp as it cools.
Cook the apples: Wipe out the skillet and set it over medium heat. Add 2 tbsp butter and let it melt until foamy. Add the diced apples, 2 tbsp maple syrup, Ceylon cinnamon, 1/4 tsp vanilla extract, and 1/4 tsp salt. Cook, stirring occasionally, for 7–9 minutes until the apples are tender when pierced with a fork and the syrup has thickened to a light glaze. Remove from heat and let cool to room temperature, about 15–20 minutes.
