Sweet potatoes are already one of the most naturally satisfying vegetables out there, and this recipe takes them somewhere genuinely special. Roasting them whole first coaxes out their natural sweetness, and then the real magic happens when the flesh gets mashed with tahini, turmeric, ginger, and a bright hit of lemon juice before being spooned right back into the skins. Every single ingredient here is naturally free of wheat, so there's no swapping, substituting, or label-squinting required — it just works as written. The golden turmeric gives the filling a gorgeous warm color, while the tahini adds a nutty richness that makes these feel indulgent without being heavy. Toasted pumpkin seeds on top bring a satisfying crunch and a little extra protein to round out the dish. Whether you're serving these as a weeknight side or a light main, they're the kind of recipe that looks far more impressive than the effort involved.

Preheat the oven to 400°F (205°C). Line a baking sheet with parchment paper. Rub the sweet potatoes all over with a thin film of olive oil and place them on the prepared baking sheet.
Roast the sweet potatoes for 45–50 minutes, until a fork slides through the thickest part with no resistance and the skins are slightly wrinkled. Remove from the oven and let cool for 5 minutes — just enough to handle.
