Sweet potatoes are already one of the most naturally satisfying vegetables out there, and this twice-baked version takes them somewhere genuinely special. The flesh gets scooped out, mashed with tahini, turmeric, ginger, and a bright hit of lemon juice, then packed back into the skins and roasted until the tops turn lightly golden. That combination of earthy sesame and warm spice is deeply savory in a way that feels almost indulgent — no sweeteners needed whatsoever. Many sweet potato recipes lean on honey or maple syrup to amplify the natural sweetness, but this one lets the turmeric and tahini do the heavy lifting instead, so every bite is rich and complex without a drop of added sweetener. The toasted pumpkin seeds on top add a satisfying crunch and a little nuttiness that ties the whole dish together. A scatter of fresh parsley at the end keeps things bright and fresh-looking on the plate. It works beautifully as a hearty side or a light main, and the ingredient list is refreshingly short and straightforward.

Preheat the oven to 400°F (205°C). Line a baking sheet with parchment paper. Rub the sweet potatoes all over with a thin film of olive oil and place them on the prepared baking sheet.
Roast the sweet potatoes for 45–50 minutes, until a fork slides through the thickest part with no resistance and the skins are slightly wrinkled. Remove from the oven and let cool for 5 minutes — just enough to handle.
