Crispy, golden, and dusted with warm spice, these baked plantain chips hit that satisfying crunch you crave without a single additive or binder in sight. Green plantains are the star here β sliced paper-thin and tossed in coconut oil with turmeric and ginger before going into the oven, they transform into something genuinely snack-worthy. Because the ingredient list is so clean and straightforward, there's no need to scrutinize labels or worry about hidden thickeners that often sneak into packaged snack foods. The turmeric gives each chip a gorgeous golden hue and a subtly earthy depth, while the ginger adds just enough warmth to keep things interesting. A mandoline makes quick work of getting those ultra-thin, even slices that bake up uniformly crisp β and the optional lime juice finish brightens the whole thing beautifully. They crisp up even more as they cool, so resist the urge to eat them straight off the pan (or don't β we won't judge). Whether you're serving them alongside a dip or snacking straight from the container, these chips are proof that simple, whole ingredients are all you really need.

Preheat the oven to 375Β°F (190Β°C). Line two large baking sheets with parchment paper.
Score the skin of each plantain lengthwise with a knife, then peel. Using a mandoline set to 1/16-inch (about 1.5 mm) or a very sharp knife, slice the plantains crosswise into rounds as thin and uniform as possible β uneven slices will brown at different rates.
