Steamed artichokes are one of those dishes that feel almost luxurious despite being incredibly simple, and this version takes things up a notch with a fragrant blend of turmeric and ginger in both the steaming liquid and the bright, lemony dipping sauce. The artichokes absorb all that warm, earthy spice as they cook, so every leaf you pull away carries a subtle golden depth that plain steamed artichokes just can't match. Because the whole recipe is built around fresh vegetables, aromatics, and olive oil, there's nothing here that relies on grain-based fillers or thickeners — it's naturally free of wheat without any substitutions required. The dipping sauce comes together in minutes with a quick whisk, and the optional parsley adds a pop of color that makes the whole plate look like something from a restaurant. Whether you're pulling leaves one by one as an appetizer or working your way down to the heart, this is the kind of hands-on, slow-down meal that makes a weeknight feel special.

Trim the artichokes: cut off the top 1 inch of each artichoke with a sharp knife, snip the sharp tips from the outer leaves with kitchen scissors, and trim the stem to about 1 inch. Rub all cut surfaces immediately with one of the lemon halves to prevent browning.
Pour the water into a large pot and add the turmeric, ginger, smashed garlic, black pepper, salt, and the squeezed lemon halves. Set a steamer basket inside the pot — the water level should sit just below the basket. Bring to a boil over high heat.
