Steamed artichokes are one of those dishes that feel almost meditative to eat — pulling each leaf, dragging it through a bright, herby sauce, working your way down to that tender heart. What makes this version especially smart is the steaming liquid itself, infused with turmeric, ginger, garlic, and lemon, so the anti-inflammatory goodness works its way into every layer of the vegetable as it cooks. Both turmeric and ginger are well-regarded for supporting hormone balance and reducing inflammation, which is exactly what you want when managing PCOS through food. The dipping sauce doubles down on those same warming spices, whisked together with extra virgin olive oil and fresh lemon juice for something tangy, golden, and genuinely craveable. Artichokes themselves are a fiber powerhouse that supports gut health and helps regulate blood sugar — two things that matter a lot when you're eating with PCOS in mind. The whole process is low-effort and naturally free of refined carbs, processed oils, or anything that would spike insulin. It's the kind of recipe that feels indulgent and intentional at the same time.

Trim the artichokes: cut off the top 1 inch of each artichoke with a sharp knife, snip the sharp tips from the outer leaves with kitchen scissors, and trim the stem to about 1 inch. Rub all cut surfaces immediately with one of the lemon halves to prevent browning.
Pour the water into a large pot and add the turmeric, ginger, smashed garlic, black pepper, salt, and the squeezed lemon halves. Set a steamer basket inside the pot — the water level should sit just below the basket. Bring to a boil over high heat.
