Steamed artichokes are one of those dishes that feel almost luxurious despite being incredibly simple, and this version leans into that with a fragrant turmeric-ginger steam bath that infuses every leaf with warm, earthy flavor. Artichokes are a naturally great choice when you're keeping iodine low — no seafood, no dairy, no iodized salt required, just whole vegetables and pantry spices. The steaming liquid does double duty here, perfuming the artichokes from the inside out while the smashed garlic and lemon add brightness that cuts through the richness of the vegetable itself. Pulling each leaf through that golden olive oil and lemon dipping sauce is genuinely one of the more satisfying eating experiences you can have at the dinner table. The sauce comes together in minutes while the artichokes do their thing on the stove, so there's very little active effort involved. Fresh parsley stirred in at the end adds a pop of color and a clean, herby finish that makes the whole plate look as good as it tastes.

Trim the artichokes: cut off the top 1 inch of each artichoke with a sharp knife, snip the sharp tips from the outer leaves with kitchen scissors, and trim the stem to about 1 inch. Rub all cut surfaces immediately with one of the lemon halves to prevent browning.
Pour the water into a large pot and add the turmeric, ginger, smashed garlic, black pepper, salt, and the squeezed lemon halves. Set a steamer basket inside the pot — the water level should sit just below the basket. Bring to a boil over high heat.
