Steamed artichokes are one of those dishes that feel both rustic and a little luxurious, and this turmeric-ginger version takes them somewhere genuinely exciting. The steaming liquid is loaded with smashed garlic, warm spices, and fresh lemon, so the artichokes absorb deep, earthy flavor all the way through before they even hit the plate. Pulling back each tender leaf and dragging it through that bright olive oil and lemon dipping sauce is a seriously satisfying ritual. Many store-bought dips and sauces sneak in sweeteners, so making your own here means you stay in full control of every ingredient. The dipping sauce comes together with just a whisk and a bowl — olive oil, lemon juice, turmeric, ginger, and a little fresh parsley if you have it on hand. It's a naturally wholesome, plant-forward dish that doesn't need any sweetness to feel complete and craveable.

Trim the artichokes: cut off the top 1 inch of each artichoke with a sharp knife, snip the sharp tips from the outer leaves with kitchen scissors, and trim the stem to about 1 inch. Rub all cut surfaces immediately with one of the lemon halves to prevent browning.
Pour the water into a large pot and add the turmeric, ginger, smashed garlic, black pepper, salt, and the squeezed lemon halves. Set a steamer basket inside the pot — the water level should sit just below the basket. Bring to a boil over high heat.
