Steamed artichokes are one of those dishes that feel a little luxurious without requiring much effort at all, and this version leans into warm, earthy spice in the best way. The steaming liquid is infused with turmeric, ginger, smashed garlic, and lemon, so the artichokes absorb gentle flavor all the way through as they cook. Pulling off each leaf and dragging it through the bright, olive oil and lemon dipping sauce is genuinely one of the more satisfying eating experiences you can have at a dinner table. Many packaged dips and sauces sneak in unexpected additives, but this one is built entirely from pantry staples you can see and trust. The whole recipe is naturally free from animal-derived thickeners or setting agents — just vegetables, spice, and good oil doing exactly what they're supposed to do. It works beautifully as a starter or a light shared plate, and the golden hue from the turmeric makes it look far more impressive than the effort involved.

Trim the artichokes: cut off the top 1 inch of each artichoke with a sharp knife, snip the sharp tips from the outer leaves with kitchen scissors, and trim the stem to about 1 inch. Rub all cut surfaces immediately with one of the lemon halves to prevent browning.
Pour the water into a large pot and add the turmeric, ginger, smashed garlic, black pepper, salt, and the squeezed lemon halves. Set a steamer basket inside the pot — the water level should sit just below the basket. Bring to a boil over high heat.
