Artichokes can feel intimidating, but this steamed preparation is genuinely approachable and the results are stunning. The whole dish leans on a fragrant steaming liquid — turmeric, ginger, smashed garlic, and lemon — that perfumes the artichokes from the inside out as they cook low and slow. Once the leaves pull away tender and golden-tinged, you dip them into a bright olive oil and lemon sauce that carries those same warm spices all the way through. It's the kind of recipe that feels fancy on the plate but asks very little of you in the kitchen. Since every ingredient here is plant-based and naturally free from any meat, there's zero need to swap or substitute a thing — just cook and enjoy. The optional parsley stirred into the dipping sauce adds a fresh pop of color that makes the whole spread look like something from a Mediterranean table.

Trim the artichokes: cut off the top 1 inch of each artichoke with a sharp knife, snip the sharp tips from the outer leaves with kitchen scissors, and trim the stem to about 1 inch. Rub all cut surfaces immediately with one of the lemon halves to prevent browning.
Pour the water into a large pot and add the turmeric, ginger, smashed garlic, black pepper, salt, and the squeezed lemon halves. Set a steamer basket inside the pot — the water level should sit just below the basket. Bring to a boil over high heat.
