Fermented foods have a reputation for sneaky additives, but this golden kraut is built from nothing but cabbage, salt, and a bold trio of turmeric, ginger, and black pepper — no stabilizers, no fillers, just old-school lacto-fermentation doing its thing. The process is beautifully simple: salt draws moisture out of the cabbage until it creates its own brine, which then does all the preserving work over five to seven days on your counter. That vivid golden-yellow color comes entirely from the fresh turmeric, and the ginger adds a gentle warmth that makes this version feel a little more exciting than a basic kraut. Optional caraway seeds round out the flavor with a subtle earthiness if you want to lean into the classic fermented vibe. Pressing the cabbage down daily keeps everything submerged and the fermentation on track — it's a low-effort routine that pays off in a seriously tangy, complex result. Once it hits the sourness you love, it goes straight into the fridge and keeps for up to two months, ready to pile onto grain bowls, eggs, sandwiches, or anything that needs a bright, probiotic punch.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick. Reserve one or two whole outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the sea salt evenly over the cabbage, then massage and squeeze firmly with both hands for 8–10 minutes, until the cabbage has released a significant amount of liquid and feels limp and wet — the brine should pool visibly at the bottom of the bowl.
