Fermented foods have a reputation for being fussy, but this golden kraut proves otherwise — just cabbage, salt, and a handful of bold spices doing their thing on your countertop. Fresh turmeric gives every shred a vivid, jewel-toned color while lending its earthy warmth, and the grated ginger adds a bright, slightly spicy kick that makes this far more interesting than any plain jar you'd find at the store. The whole process is naturally free of soy in every form — no tamari, no hidden additives, just whole ingredients you can see and smell. Massaging the cabbage until it releases its own brine is genuinely satisfying, and watching the liquid pool at the bottom of the bowl is a small but real kitchen thrill. Packing it tightly into a mason jar and letting fermentation do the work over five to seven days means the flavor develops on its own schedule, getting tangier and more complex as it goes. A folded cabbage leaf and a simple weight keep everything submerged, so there's no special equipment required. Pile it onto grain bowls, tuck it alongside roasted vegetables, or eat it straight from the jar — it keeps in the fridge for up to two months, though it rarely lasts that long.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick. Reserve one or two whole outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the sea salt evenly over the cabbage, then massage and squeeze firmly with both hands for 8–10 minutes, until the cabbage has released a significant amount of liquid and feels limp and wet — the brine should pool visibly at the bottom of the bowl.
