Bright golden and alive with the warmth of fresh turmeric and ginger, this fermented kraut is the kind of condiment that quietly upgrades everything it touches — grain bowls, grilled meats, eggs, or just eaten straight from the jar with a fork. It's built entirely from cabbage, salt, and a handful of bold spices, so there's nothing hidden and nothing to second-guess. The process is beautifully low-tech: salt, massage, pack, and wait. Massaging the cabbage until it releases its own brine is the real magic here, creating a natural liquid that does all the preservation work without any vinegar or added starters. Black pepper alongside the turmeric isn't just for flavor — it actually helps your body absorb the curcumin, which feels like a nice bonus. After five to seven days at room temperature, you'll have a tangy, probiotic-rich kraut with a gorgeous golden hue that keeps in the fridge for up to two months. It's the kind of thing you'll want to keep a jar of going at all times.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick. Reserve one or two whole outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the sea salt evenly over the cabbage, then massage and squeeze firmly with both hands for 8–10 minutes, until the cabbage has released a significant amount of liquid and feels limp and wet — the brine should pool visibly at the bottom of the bowl.
