Fermented foods can feel intimidating, but this golden kraut is one of the most rewarding things you can make with just a handful of pantry staples and a little patience. Fresh turmeric gives the shredded cabbage a gorgeous, vivid yellow hue, while grated ginger and black pepper layer in warmth and a gentle kick that plain sauerkraut simply can't match. The whole process is driven by salt and time — no vinegar shortcuts, no starters, just natural lacto-fermentation that builds real, complex tang. Because every ingredient here is a whole, unprocessed food, there's nothing hidden to worry about, making it a genuinely clean and trustworthy condiment. Pressing the cabbage down daily during those first couple of days is oddly satisfying, and by day five you'll be sneaking tastes straight from the jar. Pile it onto grain bowls, tuck it alongside roasted meats, or eat it by the forkful — it keeps in the fridge for up to two months, though it rarely lasts that long.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick. Reserve one or two whole outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the sea salt evenly over the cabbage, then massage and squeeze firmly with both hands for 8–10 minutes, until the cabbage has released a significant amount of liquid and feels limp and wet — the brine should pool visibly at the bottom of the bowl.
