Fermented foods have a reputation for being fussy, but this golden kraut is proof that the process can be beautifully simple — just cabbage, salt, and a handful of bold spices working their slow magic on your countertop. Fresh turmeric gives every shred a vivid, sunny color while lending its warm, earthy depth, and the grated ginger adds a bright, slightly spicy kick that makes this version feel far more exciting than anything you'd pull off a store shelf. A pinch of black pepper and optional caraway seeds round out the flavor in a way that's complex without being complicated. The whole thing is entirely plant-based, built from whole vegetables and spices with no animal products of any kind — so there's zero concern about hidden seafood-derived ingredients like fish sauce or anchovy paste that sometimes sneak into fermented condiments. Massaging the cabbage until it releases its own brine is the real secret here, creating a natural liquid that keeps everything safely submerged as it ferments over five to seven days. The result is tangy, crunchy, and deeply savory — perfect piled onto grain bowls, tucked into sandwiches, or eaten straight from the jar. Once it hits the fridge, it keeps for up to two months, so one batch goes a very long way.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick. Reserve one or two whole outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the sea salt evenly over the cabbage, then massage and squeeze firmly with both hands for 8–10 minutes, until the cabbage has released a significant amount of liquid and feels limp and wet — the brine should pool visibly at the bottom of the bowl.
