Fermented foods have a way of transforming the humblest ingredients into something genuinely exciting, and this golden kraut is a perfect example. Fresh turmeric and ginger bring warmth and a vivid color to the shredded cabbage, while black pepper and optional caraway seeds add just enough complexity to keep every forkful interesting. The whole process is driven by nothing more than salt, time, and a little daily attention — no vinegar, no starter culture, no specialty equipment beyond a mason jar. Massaging the cabbage until it releases its own brine is the key step, and once that liquid pools at the bottom of the bowl, you know the fermentation magic is already underway. After five to seven days at room temperature, you're rewarded with a tangy, probiotic-rich condiment that keeps in the fridge for up to two months. It's brilliant piled onto grain bowls, tucked into sandwiches, or served alongside roasted meats and vegetables. Every ingredient here is straightforward and plant-based, so there's zero guesswork about hidden nuts or cross-contact from processed additives.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick. Reserve one or two whole outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the sea salt evenly over the cabbage, then massage and squeeze firmly with both hands for 8–10 minutes, until the cabbage has released a significant amount of liquid and feels limp and wet — the brine should pool visibly at the bottom of the bowl.
