Fermented foods have a way of making the simplest ingredients feel almost magical, and this golden kraut is a perfect example. Fresh turmeric and ginger transform a humble head of green cabbage into something vibrant, warming, and deeply flavorful — with a gorgeous yellow hue that looks stunning on any plate. The whole process relies on nothing more than salt, spices, and time, so there are zero hidden stimulants or additives to worry about. Massaging the cabbage by hand draws out its natural brine, which does all the preservation work without any vinegar or special equipment. A weighted cabbage-leaf cap keeps everything submerged while the fermentation does its thing over five to seven days at room temperature. The optional caraway seeds add a subtle earthy note that plays beautifully against the brightness of the ginger and the earthiness of the turmeric. Pile it onto grain bowls, serve it alongside roasted meats, or eat it straight from the jar — it keeps in the fridge for up to two months, so one batch goes a long, long way.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick. Reserve one or two whole outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the sea salt evenly over the cabbage, then massage and squeeze firmly with both hands for 8–10 minutes, until the cabbage has released a significant amount of liquid and feels limp and wet — the brine should pool visibly at the bottom of the bowl.
