Fermented foods don't get much more vibrant than this golden jar of tangy, spiced sauerkraut. Fresh turmeric gives it that striking yellow hue while adding a warm, earthy depth that pairs beautifully with the bright bite of ginger and the subtle heat of black pepper. The whole process is completely plant-based — just cabbage, salt, and spices doing their thing over five to seven days of natural fermentation. Massaging the cabbage until it releases its own brine is the real magic here, no vinegar or additives needed to get that satisfying sourness. Optional caraway seeds round out the flavor with a faintly anise-like note that makes it feel almost deli-worthy. It keeps in the fridge for up to two months, so one batch goes a long way on grain bowls, sandwiches, eggs, or anything that needs a punchy, probiotic-rich kick.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick. Reserve one or two whole outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the sea salt evenly over the cabbage, then massage and squeeze firmly with both hands for 8–10 minutes, until the cabbage has released a significant amount of liquid and feels limp and wet — the brine should pool visibly at the bottom of the bowl.
