This vibrant grain salad takes the spirit of classic tabbouleh and gives it a bold, golden upgrade with fresh turmeric and ginger running through every bite. The base is fluffy quinoa instead of bulgur, which keeps the whole dish naturally free from any red meat or animal-derived ingredients ā just clean, plant-forward flavors from start to finish. A generous heap of flat-leaf parsley and fresh mint keeps things bright and herbaceous, while diced tomatoes, Persian cucumbers, and scallion greens add crunch and freshness in every forkful. The dressing is where the magic really happens: a whisked blend of extra virgin olive oil, lemon juice, both fresh and ground turmeric, and grated ginger that turns a vivid, sunshine yellow and coats everything beautifully. A scatter of pomegranate seeds over the top is optional, but the little bursts of tartness and color make it feel genuinely special. This is the kind of salad that works just as well packed for lunch as it does alongside a spread at the dinner table ā and because every single ingredient is whole and straightforward, there's no second-guessing what's in it.

Rinse the quinoa in a fine-mesh strainer under cold running water for 30 seconds, then drain well. Combine the rinsed quinoa, water, and 1/4 tsp salt in a medium saucepan and bring to a boil over medium-high heat. Reduce the heat to low, cover, and cook until the water is fully absorbed and the quinoa tails have unfurled, about 13ā15 minutes.
Remove the saucepan from the heat and let the quinoa steam, covered, for 5 minutes. Uncover, fluff with a fork, and spread the quinoa onto a large mixing bowl or sheet pan to cool to room temperature, about 10 minutes.
