Bright, earthy, and packed with texture, this grain salad is the kind of bowl that makes you feel genuinely good after eating it. Fluffy millet forms the base, soaking up a golden dressing built from fresh lemon juice, grated ginger, and turmeric — warm and zingy in equal measure. Crispy oven-roasted chickpeas add a satisfying crunch alongside cool cucumber, juicy cherry tomatoes, and handfuls of fresh parsley and mint. Pumpkin seeds round everything out with a nutty bite, so you get all the richness and depth you'd want without any tree nuts in the mix. The dressing comes together in one small bowl and does a lot of heavy lifting, tying the whole salad together with a vibrant, anti-inflammatory warmth. It works beautifully served right away while the chickpeas are still crisp, or at room temperature if you're packing it for lunch.

Preheat the oven to 425°F (220°C). Pat the drained chickpeas thoroughly dry with a clean kitchen towel or paper towels — they should feel dry to the touch. Spread them on a rimmed baking sheet, drizzle with 1 tbsp olive oil, and toss with ½ tsp turmeric, ¼ tsp black pepper, and ¼ tsp salt until evenly coated.
Roast the chickpeas on the center rack for 25–30 minutes, shaking the pan once halfway through, until they are deep golden and crisp on the outside.
