Bright, nourishing, and packed with ingredients that genuinely earn their place on the plate, this vibrant salad is the kind of meal that makes you feel good from the inside out. Millet is a wonderfully gentle grain that cooks up light and fluffy, making it an ideal base for anyone who finds heavier grains harder to digest. The dressing is where the real magic happens — fresh ginger and turmeric bring serious anti-inflammatory credentials, while lemon juice and raw honey balance everything with a bright, honeyed tang. Roasting the chickpeas until they're deep golden and crisp gives them a satisfying crunch and makes them far easier on the gut than eating them straight from the can. Cucumber, cherry tomatoes, parsley, and fresh mint keep the whole bowl feeling clean and alive, while pumpkin seeds add a toasty, mineral-rich finish. Every component here is whole, recognizable, and chosen with digestive ease in mind — no processed fillers, no mystery ingredients, just food that works with your body. It's equally good served warm right after tossing or left to sit at room temperature, making it a genuinely flexible option for meal prep or a relaxed weeknight dinner.

3 tbsp fresh lemon juice (from about 1 large lemon)
1 tsp ground turmeric
1 tsp fresh ginger, finely grated
1 tsp raw honey
¼ tsp black pepper
¼ tsp salt
For the salad
1 english cucumber, diced
1 cup cherry tomatoes, halved
¼ cup red onion, finely diced
½ cup fresh flat-leaf parsley, roughly chopped
¼ cup fresh mint leaves, roughly torn
¼ cup dry-roasted pumpkin seeds
Instructions
1
Preheat the oven to 425°F (220°C). Pat the drained chickpeas thoroughly dry with a clean kitchen towel or paper towels — they should feel dry to the touch. Spread them on a rimmed baking sheet, drizzle with 1 tbsp olive oil, and toss with ½ tsp turmeric, ¼ tsp black pepper, and ¼ tsp salt until evenly coated.
2
Roast the chickpeas on the center rack for 25–30 minutes, shaking the pan once halfway through, until they are deep golden and crisp on the outside.
