Bright, earthy, and loaded with texture, this grain salad is the kind of bowl that genuinely earns its place on a weeknight table or a weekend spread. Fluffy millet forms the base, soaking up a punchy lemon-turmeric-ginger dressing that brings warmth without any heat, while crispy oven-roasted chickpeas add a satisfying crunch in every bite. Fresh cucumber, cherry tomatoes, red onion, parsley, and mint keep things lively and cool against all that golden spice. Pumpkin seeds finish the whole thing off with a nutty richness — and since every ingredient here is naturally free from tree nuts like cashews, there's no label-scanning or substitution stress involved. The dressing comes together with a quick whisk, and the chickpeas do most of their work in the oven while the millet cooks on the stovetop, so the timing is surprisingly relaxed. It's equally good served right away while the chickpeas are still crisp, or packed up for lunch the next day.

Preheat the oven to 425°F (220°C). Pat the drained chickpeas thoroughly dry with a clean kitchen towel or paper towels — they should feel dry to the touch. Spread them on a rimmed baking sheet, drizzle with 1 tbsp olive oil, and toss with ½ tsp turmeric, ¼ tsp black pepper, and ¼ tsp salt until evenly coated.
Roast the chickpeas on the center rack for 25–30 minutes, shaking the pan once halfway through, until they are deep golden and crisp on the outside.
