Bright, earthy, and genuinely satisfying, this lentil and cucumber salad is the kind of bowl that makes clean eating feel like a treat rather than a compromise. Green or French lentils hold their shape beautifully after cooking, giving you a hearty, protein-rich base that pairs perfectly with crisp cucumber half-moons and a handful of fresh parsley. The dressing is where things get really interesting — turmeric, fresh ginger, cumin, and lemon juice come together in a boldly spiced vinaigrette that's anti-inflammatory by nature and completely free of sugar, vinegar, or anything that tends to throw off a carefully managed gut protocol. Pumpkin seeds add a satisfying crunch and a solid dose of zinc without introducing anything problematic, and using only the green tops of scallions keeps the allium content mild. Everything here is whole, recognizable, and intentional — no hidden sweeteners, no fermented ingredients, no guesswork about what's lurking in a store-bought dressing. It comes together in under 30 minutes and tastes even better after the lentils have had a chance to soak up all that golden, gingery dressing.

Combine the rinsed lentils, water, and 1/2 tsp salt in a medium saucepan and bring to a boil over high heat. Reduce the heat to a gentle simmer and cook, uncovered, until the lentils are tender but still hold their shape, 20–25 minutes. Drain any remaining water and spread the lentils on a large plate or sheet pan to cool for 10 minutes.
While the lentils cool, whisk together the olive oil, lemon juice, turmeric, grated ginger, garlic, cumin, black pepper, and 1/4 tsp salt in a small bowl until the dressing is uniform in color and the oil is fully emulsified.
