Every ingredient in this hummus is exactly what it says it is — fresh ginger grated by hand, real lemon juice squeezed from an actual lemon, and whole chickpeas blended down to something impossibly silky. That matters more than it might sound, because store-bought dips are notorious for sneaking in "natural flavors" and other vague additives that have no business being in something this simple. Here, you bloom the garlic and ginger in olive oil first, which coaxes out a warm, fragrant depth that no flavor packet could replicate. Turmeric gives the whole bowl a gorgeous golden hue while cumin adds just enough earthiness to keep things interesting. Streaming in ice water while the food processor runs is the trick that takes this from grainy to genuinely restaurant-smooth. A drizzle of good olive oil and a dusting of smoked paprika at the end make it look as impressive as it tastes. Once you know exactly what went into your hummus — and it's all this good — going back to the store-bought stuff is going to be a hard sell.

In a small skillet over medium-low heat, warm 1 tbsp of the olive oil. Add the minced garlic and grated ginger and cook, stirring frequently, until fragrant and just softened, about 1–2 minutes. Watch closely — garlic can brown quickly. Remove from heat and let cool for 2 minutes.
Add the drained chickpeas, tahini, remaining 2 tbsp olive oil, lemon juice, turmeric, cumin, black pepper, salt, and the cooled garlic-ginger mixture to a food processor. Process for 1 minute until the mixture is roughly combined.
