Bright, bold, and packed with texture, this salad brings together golden pan-seared tofu, massaged kale, crunchy cabbage, and a creamy tahini-lemon dressing that ties everything together beautifully. Every single ingredient here is naturally free of xanthan gum — no thickeners, no stabilizers, no label-reading stress. The dressing gets its silky, pourable consistency simply from whisking tahini with fresh lemon juice, olive oil, honey, and a little water, which means you're getting real, clean flavor without any additives doing the heavy lifting. Pressing and pan-frying the tofu in turmeric, ginger, and garlic powder creates a deeply spiced, crispy crust that holds up against the hearty greens without turning soggy. Massaging the kale with a portion of the dressing is a small step that makes a huge difference — the leaves soften just enough to become tender and almost silky while still holding their structure. Pumpkin seeds add a satisfying crunch, and the optional cilantro brings a fresh, herby lift that makes the whole bowl feel vibrant and restaurant-worthy. This is the kind of salad that actually fills you up and makes you genuinely excited to eat your greens.

¼ tsp ground turmeric
2–3 tbsp water
¼ tsp salt
For the salad
1 large bunch curly or lacinato kale (about 8 cups), stems removed and leaves torn into bite-sized pieces
2 cups purple cabbage, thinly shredded
1 cup shredded carrots
¼ cup dry-roasted pumpkin seeds (pepitas)
¼ cup fresh cilantro, roughly chopped (optional)
