Bright, earthy, and satisfying in every bite, this bowl layers massaged kale and crunchy vegetables with golden, spice-crusted tofu that crisps up beautifully in a hot skillet. The warm notes of turmeric and ginger run through both the tofu and the creamy tahini dressing, giving the whole salad a cohesive, deeply savory flavor that feels anything but plain. For anyone navigating a citric acid sensitivity, packaged dressings and pre-marinated proteins are almost always off the table — but here, every component is made from scratch with whole, straightforward ingredients you can trust. Fresh lemon juice stands in as the only acidic element in the dressing, and since it comes straight from the fruit rather than a processed additive, it sidesteps the concern entirely. Massaging the kale with a generous pour of that tahini dressing softens the leaves just enough to make them tender and silky without any cooking required. The pumpkin seeds add a satisfying crunch, the shredded cabbage and carrots bring color and freshness, and the crispy tofu makes this feel like a genuinely complete, nourishing meal. It's the kind of salad that converts skeptics — bold enough to feel indulgent, clean enough to feel good about every forkful.

2–3 tbsp water
¼ tsp salt
