In a mixing bowl, whisk together the coconut milk, maple syrup, turmeric, ginger, cinnamon, black pepper, and vanilla extract until the spices are fully incorporated and the mixture is uniformly golden.
Add the rolled oats and chia seeds to the bowl and stir until everything is evenly coated. The mixture will look loose at this stage — the chia seeds will thicken it overnight.
