Rich, deeply savory, and glowing with golden color, this slow-simmered bone broth is the kind of thing that makes your whole kitchen smell incredible for hours. Roasting the beef bones first builds a serious depth of flavor before they ever hit the pot, and the long, lazy simmer — anywhere from eight to twenty-four hours — coaxes out all that collagen and gelatin that gives a great broth its signature jiggly, silky body. Fresh turmeric root and ginger bring a warm, earthy brightness that sets this apart from any plain stock you'd find on a grocery shelf. Apple cider vinegar does quiet but important work here, helping draw minerals out of the bones during that initial soak before the heat even turns on. Every ingredient in this pot is naturally free from grain-based additives and fillers, so there's no need to scrutinize labels or worry about hidden thickeners sneaking in. The finished broth is endlessly versatile — sip it straight from a mug, use it as a base for soups and stews, or freeze it in portions to have on hand whenever you need it.

Preheat the oven to 425°F (220°C). Arrange the beef bones in a single layer on a rimmed baking sheet and roast for 30–35 minutes, until deeply browned on the surface.
Transfer the roasted bones to a large stockpot (8-quart or larger). Pour off and discard any rendered fat from the baking sheet, then add 1 cup of the cold water to the hot baking sheet and scrape up any browned bits with a wooden spoon; pour this liquid into the pot.
