Slow-simmered bone broth is one of those kitchen projects that rewards patience in the most satisfying way — and this turmeric-forward version delivers a rich, amber-gold liquid that's deeply nourishing and genuinely beautiful. The beef bones are roasted first until deeply browned, which builds a savory backbone before a single drop of water hits the pot. Fresh turmeric root and ginger bring warmth and a gorgeous golden hue, while carrots, celery, onion, and a generous bundle of herbs round out the flavor into something complex and aromatic. A splash of apple cider vinegar is added early and allowed to sit with the bones before the heat goes on — a simple step that helps draw minerals out of the bones and into your broth. Because every ingredient here is whole and naturally unprocessed, there's no need to scrutinize labels or worry about hidden gluten sneaking in through additives or thickeners. The long, lazy simmer — anywhere from eight to twenty-four hours — coaxes out collagen until the finished broth gels when chilled, a sign you've done everything right. Use it as a warming sip on its own, a base for soups and stews, or anywhere you want to add serious depth without any compromise.

Preheat the oven to 425°F (220°C). Arrange the beef bones in a single layer on a rimmed baking sheet and roast for 30–35 minutes, until deeply browned on the surface.
Transfer the roasted bones to a large stockpot (8-quart or larger). Pour off and discard any rendered fat from the baking sheet, then add 1 cup of the cold water to the hot baking sheet and scrape up any browned bits with a wooden spoon; pour this liquid into the pot.
