Homemade jerky is one of those snacks that feels indulgent but is actually doing a lot of good work — especially when you're navigating a protocol that rules out sugar, vinegar-heavy condiments, and most store-bought processed foods. Commercial jerky is almost always off the table due to added sugars, soy sauce, and mystery preservatives, so making your own is genuinely the move. Here, lean turkey breast gets marinated in coconut aminos, a small splash of apple cider vinegar, and a warm blend of smoked paprika, garlic powder, onion powder, and black pepper — every single ingredient earns its place and nothing sneaks in that shouldn't be there. The low-and-slow oven method pulls out moisture gradually, giving you that satisfying chewy texture without a dehydrator. A little cayenne is optional if you want a kick, and the whole batch makes enough to keep you stocked for the week. It's the kind of high-protein, grab-and-go snack that makes sticking to a restrictive eating plan feel a lot less like deprivation and a lot more like a treat.

Coconut aminos is a common stand-in for soy sauce on a candida diet. It does carry a little sugar from coconut sap, but this recipe uses only about 1 1/2 teaspoons per serving, which is likely fine.

Place the turkey breast in the freezer for 30–45 minutes until it is firm but not frozen solid — this makes it much easier to slice thinly and evenly.
Using a sharp knife, slice the turkey against the grain into strips about 1/8-inch thick. Aim for uniform thickness so the strips dry at the same rate.
