Bone-in, skin-on chicken thighs get a deep golden sear before simmering low and slow in a fragrant tomato-ginger sauce — the kind of one-pot dinner that makes the whole kitchen smell incredible. Turmeric, cumin, coriander, garam masala, and fresh ginger are the real stars here, and each one brings serious anti-inflammatory credentials to the table alongside genuinely bold flavor. Sweet potato cubes soak up the spiced broth as they cook, turning buttery-tender and naturally sweet against the savory, slightly smoky sauce. This is exactly the kind of recipe that proves eating to support your body doesn't mean sacrificing depth or comfort. The Dutch oven method builds layers — browning the chicken first, blooming the spices, then letting everything braise together — so the final dish tastes like it took far more effort than it did. Serve it in shallow bowls with a squeeze of lemon and a handful of fresh cilantro to brighten the whole thing up. Makes 4 generous servings, and the leftovers reheat beautifully.

Pat the chicken thighs dry with paper towels and season all over with the salt and black pepper.
Heat the olive oil in a large Dutch oven over medium-high heat until shimmering. Add the chicken thighs skin-side down in a single layer and sear, undisturbed, for 5–6 minutes until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, then transfer the thighs to a plate. Pour off all but about 1 tablespoon of fat from the pot.
