Bold, smoky, and layered with warm spice, this jerk chicken is the kind of dish that makes everyone gather around the grill. Bone-in thighs and drumsticks are the stars here ā they stay juicy through the high-heat cooking and pick up every bit of that deeply fragrant marinade. The paste itself is built from fresh thyme, allspice, cinnamon, nutmeg, Scotch bonnet peppers, and a splash of tamari and maple syrup, which together create that signature jerk balance of heat, sweetness, and earthiness. Marinating for at least four hours (overnight if you can swing it) lets those flavors work all the way into the meat before it ever hits the grates. The reserved marinade gets brushed back on during grilling, building a lacquered, slightly charred crust that is genuinely hard to stop eating. A squeeze of fresh lime at the end cuts through the richness and ties everything together. This is a crowd-pleasing centerpiece that happens to be completely poultry-specific ā no turkey, no fillers, just real ingredients doing exactly what they're supposed to do.
