This deeply fragrant stew is the kind of one-pot meal that makes the whole kitchen smell incredible — warm spices, creamy coconut milk, and a bright hit of lime all coming together in a single Dutch oven. Bone-in, skin-on chicken thighs get seared until golden before simmering low and slow, so the meat turns fall-apart tender and the broth picks up every bit of that rich, developed flavor. Turmeric, ginger, coriander, and cumin are the backbone here — a lineup that reads like a greatest-hits list of ingredients celebrated for their natural anti-inflammatory properties. Sweet potato cubes soak up the coconut broth as they cook, adding a gentle sweetness and a satisfying heartiness that makes this feel like real comfort food rather than a compromise. Baby spinach wilts in at the end for a pop of color and an extra layer of nutrition, while fresh lime juice stirred in off the heat keeps everything tasting alive and vibrant. It serves four, which makes it ideal for a weeknight family dinner or a batch you can reheat throughout the week without losing any of the depth. Finish it with fresh cilantro and an extra squeeze of lime, and it genuinely tastes like something you'd order at a restaurant.

Pat the chicken thighs dry with paper towels and season all over with the salt and black pepper.
Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the chicken thighs skin-side down and sear, undisturbed, for 5–6 minutes until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes, then transfer to a plate. The chicken will not be cooked through at this stage.
