In a small bowl, whisk together the oyster sauce, soy sauce, fish sauce, sugar, sesame oil, and white pepper until the sugar dissolves. Set aside.
Heat 2 tbsp of the neutral oil in a large wok or 12-inch skillet over medium-high heat until shimmering. Add the paneer cubes in a single layer and cook undisturbed for 2–3 minutes, until the undersides are deep golden. Flip and cook for another 2 minutes, until golden on the second side. Transfer to a plate and set aside.
